French Chef John Weaver at the Mount Hope Estate & Winery Mansion home of the Pennsylvania Renaissance Faire prepares French Caramelized Onion & Bleu Cheese Tartlets on the White Rose Cooking Show sponsored by YorkCountyDining.com RECIPE: Caramelized Onion & Bleu Cheese Tartlets Yields: 10-12 tartlets 1 medium sweet onion thinly sliced Tbsp. butter Pinch of thyme 2oz. Bleu cheese crumbles Tsp. chopped garlic Salt and pepper Fresh chopped rosemary for garnish 10-12 mini tartlet shells- puff pastry or phyllo Procedure: sauté onions over medium low heat in butter until they begin to brown. Add garlic, salt, pepper and thyme. Cook for about 4 more minutes. Turn off heat and add bleu cheese crumbles stirring to incorporate. Let onion mixture cool, fill cups and garnish with chopped rosemary.
